Big on flavor, small in size—our Mini Cinna-Pumpkin Cookies are the perfect little taste of fall. Each bite-sized cookie is baked with spiced pumpkin dough, melty cinnamon chips, and topped with a swirl of cream cheese glaze and a sprinkle of cinnamon-sugar sparkle. They’re the kind of treat you can pop in your mouth and instantly feel the coziness of autumn.
These minis were inspired by my cat, Phoebe, who I rescued at 13 and lovingly called my princess. Though our time together was short, she filled my days with small but unforgettable moments—sunshine naps, gentle hand-holding hugs, soft cuddles during Frozen 2. It’s the little things she left behind that meant the most, and these cookies are a sweet reflection of that.
